Get ready for Christmas

CHRISTMAS FAIRINGS

THESE PROBABLY WON'T LAST BEYOND COOLING, BUT IF THEY DO, THEY MAKE A LOVELY GIFT, PACKED IN A DECORATED COOKIE JAR.

You will need –

100g.self raising flour, 1 tsp. ground ginger, pinch mixed spice, ground nutmeg and cloves.1 tsp. bicarbonate of soda, 40g.granulated sugar, 50g. butter ( or marge),

2 tbsps. Golden syrup.

  • Rougly chop the butter or marge.
  • Combine flour, ginger, spice, soda and sugar, add the butter and process in a food mixer until the mixture resembles coarse breadcrumbs.  Add the syrup and process until the ingredients are well mixed.
  • Roll the mixture, in the hands, into balls the size of small walnuts and place them on an oiled baking sheet, with plenty of space between them.   Flatten the balls slightly with the palm of your hand and bake them in a hot oven (375f. 190C. Reg.5) for 15-20 minuter until spread and lightly cracked on top.  Leave to cool on the tray and remove to a rack when cool.
  • The children can store these in airtight glass jars with a pretty piece of cloth or paper under the lid and a ribbon and hand made label.
